Afternoon folks, I seem to be having a Pajama day today but no cosy day is complete without a delicious lunch, don't you think? This will be a recipe for simple "Tuna Fishcakes with sauteed avocado and tom tomatoes". This was rustled up by leftovers that i just found in the fridge but its good enough (and easy enough) that you could just make it from scratch.

This serves 1 person so feel free to double the recipe for 2 people (or maybe just yourself).
What you will need:
1. Start by mixing the drained tuna and mayonnaise in bowl until the tuna is coated in the mayonnaise and mashed in.

- 1 fist worth/1 cup of already cooked and mashed celeriac and sweet potato
- 1 small tin of tuna in water (drained)
- 1 ripe avocado (peeled and stoned)
- Approx 6/8 tom (small) tomatoes (chopped in half)
- 1 medium pan filled with approx 2/3 cm olive oil.
- a small handful of coriander or spring onions if you prefer (optional - its basically to add a bit of colour).
1. Start by mixing the drained tuna and mayonnaise in bowl until the tuna is coated in the mayonnaise and mashed in.
2. Now add the mashed sweet potato and potato and mix it in with the tuna to form a thick paste.
3. This next step is optional and is basically to add a bit of colour to the slightly boring paste that we have got so far. If you want to pack in some greens, then add some chopped coriander or spring onions and mix it in the mixture of tuna and potato.
4. Now it's time to get your hands dirty! Take a handful of the mixture and using both hands, roll it in to a ball and place on a plate to the side. Repeat until the mixture is finished.
5. Heat up 2 cm of oil in a frying pan on a high heat until you can feel the steam rising from it. Once heated up nice and proper, take as many patty's as you can fit in the pan (if your under the age of 16, maybe ask an adult to help you) and place the little fishcakes in the oil using a spatula. They will start sizzling once they hit the pan, this is how you will know the pan is hot enough.
6. Obviously my camera does not like this pan so apologies for this terrible imagery and photography. But, basically after about 5 minutes, you will be able to see a dark crust form on the underside of the patty, this is the time to flip ya'll stuff.
7. Note* Sorry about the blurriness, the steam from the pan got on the camera lens.
After another 5 minutes, the patty's will be ready so using a spatula, remove them from the pan and place them on a plate covered with a kitchen towel. This allows the fat (olive oil) to drip out and makes them less greasy.

8. Now with the remaining heated oil in the pan, add the sliced avocado and tom tomatoes and saute for about 10 minutes until slightly browned.
Plate up both of the items and eat up! Overall, its a very yummy comfort food kind of dish, the patty's are slightly crumbly so if you would prefer them to be a firm fishcake then you can add some whisked egg to the mixture and then cook them.
