Delicious protein filled lunch. Eggs, Vegetables and Dairy, everything to make sure you keep full of energy throughout the day (sorry, that just sounded like some cheesy catchphrase for a energy drink or something). I usually eat this after a full workout at the gym as i'm always hungry when I come out and this is satisfying and delicious to eat.
Simply scramble 2 eggs in a pan with some butter, slice and stone the avocado and goats cheese. Place on a plate, drizzle with extra virgin olive oil, salt/ pepper and Enjoy!
Note* The goats cheese in this picture is so delicious I just had to mention it. For some odd reason, I am addicted to it buying 4 logs for £10 and eating all of them (myself) in a week. This melt in the mouth specimen ladies and gentlemen, is 'Sainsbury's' own Goats Cheese Log, the best I have ever tasted. I definitely recommend!
